Okra curry is a simple dish to prepare and this recipe serves about 5-6 persons. You just need some fresh okra, one diced onion, curry powder, tamarind paste, some coconut milk, curry leaves and some oil for frying.

First, wash the okra thoroughly and pat them dry with a clean paper towel. Then, cut off the okra stalk of each okra.

Now, pour some oil into a wok and once it is hot deep-fry the okra. Using another pan, add one tablespoon of oil. Next, fry the curry leaves and diced onion until they are soft.

In another pan, put the fried okras, and add the tamarind paste, coconut milk and curry powder. Bring the mixture to a boil. Prior to removing the pan from the fire, allow the curry to simmer for about 5 minutes.

Lastly, garnish the okra curry with some mint leaves or coriander while serving hot with rice.
